Fillets is a Japanese omakase restaurant run by Chef Randy Chaichat Noprapa, who was mentored by Iron Chef Masaharu Morimoto. The restaurant offers sushi omakase and a modernist kappo format that mixes raw fish, grilled and fried dishes, soup and sushi. Fish arrives from Tokyo five times a week, and wagyu beef is also featured. It is on the third floor of The Storeys at One Bangkok and is listed in the Michelin Guide.
